With beef brisket.
Ingredients A
5 tbsp dried chili paste
1/2 tbsp tamarind paste (or to taste ), mixed with some water
1 bundle laksa leaves
1 tomato, cut into six wedges
800 ml water (or as needed)
Salt, seasoning powder and sugar (optional) to taste.Ingredients B for the sauce (finely blended)
2 onions
4 cloves garlic
1 - 1/2 pinches ginger
1 pinch fresh turmeric
Roasted dried shrimp paste (optional)
Galangal
Lemongrass
Method:
1. Heat some oil in pan. Sauté ingredients B and dried chilli paste over low heat until the chilli is mature and the oil separates.
2. Add enough water to cover the beef then add tamarind juice, salt, sugar and seasoning powder to taste.
3. Bring to boil (if needed, you can also add some water gradually, to keep the broth from becoming too thin).
4. Add beef and cook over low heat to prevent the beef from breaking apart.
5. Add tomato and laksa leaves. Stir until aromatic.
