Tocumwal Chocolate School is holding fun lessons for adult chocolate lovers with a passion for luxury artisan chocolate and a desire to learn in a fun and friendly atmosphere.
Chocolatier Wendy Alford, who runs the school, said she prefers the term experiences over lessons, as they’re much more than an educational class.
Wendy is one of Australia’s most highly regarded chocolatiers and in 2022 founded the Tocumwal Chocolate School to share her passion for chocolate.
She said the popularity of artisanal chocolate stemmed from its uniqueness.
“It’s a luxurious, sensual, multi-purpose treat,” Wendy said.
Students will be able able to explore different types of chocolate and learn how to temper and mould chocolate using a variety of techniques, as well as making their own chocolate.
“Students will be able to learn how to make their very own ganache and praline,” Wendy said.
The adults-only lessons are held at Wendy’s modern facility in Tocumwal and are open to all skill levels, from novice chocolate lovers to chocolate artisans, pastry chefs, confectioners, bakers and caterers.
Everything students require is provided for and along with the lessons, students who are doing a whole-day class will be able to enjoy a magnificent lunch served on the school’s deck overlooking the flood plains.

Participants of extended classes, which run over two or three days, are able to stay in luxurious accommodation at the school.
At the end of the experience, students will be able to take home the recipes for their creation, as well as packaged creations to share with family and friends.
However, Wendy believes the greatest thing attendees take with them is not physical.
“You’ll not only walk away with improved knowledge and skills but great memories as well,” Wendy said.
