Michel Elias Germani, 65, is accused of masterminding a robbery at his eponymous jewellery store in Sydney's CBD in January, telling police two men threatened him and his employee with a knife, tying them up and demanding access to a safe.
Five people have been charged since then, including Germani.
The employee has not been charged, described by police as "absolutely traumatised" by what they considered a genuine robbery.
Investigators allege it was a scam orchestrated by the award-winning jeweller to defraud his insurer.
Court documents seen by AAP allege Germani sought $2,821,348 from Barrenjoey Insurance, underwritten by Lloyds of London, allegedly making false statements to do so.
Germani remains behind bars after being denied bail in May due to allegations of a highly organised operation, despite police not having served any evidence.
When his matter returned to Downing Centre Local Court on Thursday, a police prosecutor said he expects evidence to be served on Germani's legal team next week.
"Telephone intercept material requires transcribing by the informants," he said.
Germani's matter returns to court on July 27.
