The 21-year-old will join the Titans immediately, Schoupp requesting to end a contract that still had two years to run in Sydney to instead take up a three-year deal at Parkwood.
He played 32 NRL games for Canterbury, debuting in the 2021 season and was often mentioned among the young talent considered long-term pillars at the battling club.
The likes of Braidon Burns and Jacob Kiraz have emerged though to muddy the waters and instead he'll be a handy acquisition for Holbrook.
"Since his debut, he's given the competition a taste of what he can bring at the NRL level, but we're confident he has more improvement left in his game," Holbrook said.
"He's a centre with good size, a good defensive game and he's also a goalkicker.
"They are all things that will be valuable to the squad."
Bulldogs football boss Phil Gould said he'd be "cheering for Aaron" after the club cleared him on Wednesday.
"Good deal for Aaron at the Titans," Gould tweeted.
"Great opportunity for his longer term future. We wish him all the best. The Bulldogs are constantly assessing and reviewing our roster. Long way to go, but very happy with the way things are progressing."
