Police say the red Volkswagen was parked in a supermarket car park on Maude St, Shepparton, while the victim quickly ran into the store just before 2pm on Friday, November 14.
An unknown man then stole the vehicle and reversed out of the car park.
Police said the man removed the baby from the car after realising the child was in the back seat, placing the baby in a box in the car park before driving away.
The victim returned and immediately found the baby before raising the alarm, police said.
Police found the stolen car the next day in the Mooroopna area.
The alleged offender is described as being in his 20s to 30s, with a slim build and 165cm tall.
He was wearing a black cap backwards, navy headphones, a blue Golden State basketball singlet, black shorts, light blue runners and black sweatbands on both wrists.
