Keto “Vital Zing Citrus Spritz” (Cindy’s Pantry favourite)
A vibrant, summery, keto-friendly cocktail packed with flavour — without carbs or sugar.
Ingredients: 45ml gin or vodka (optional), Soda water, 4-6 drops Vital Zing Lemon Lime or Tropical flavour, Slice of lime or cucumber, ice
Method:
1. Fill a glass with ice.
2. Add gin or vodka (if using).
3. Add Vital Zing drops.
4. Top with soda water.
5. Garnish and enjoy!
Homemade Low-Carb Berry Pavlova Cups (Naturally sweetened)
Ingredients: 4 egg whites, ½ cup powdered natural sweetener (such as erythritol, xylitol, or monk fruit blend), 1 tsp white vinegar, 1 tsp vanilla extract, 1 cup Greek or coconut yogurt, 1 tsp vanilla for the yogurt, Fresh berries, Toasted coconut or crushed nuts
Method:
1. Preheat your oven to 110°C (fan-forced). Line a baking tray with baking paper.
2. Beat egg whites until soft peaks form.
3. Slowly add the natural sweetener, one spoonful at a time, beating until glossy stiff peaks form.
4. Add vinegar and vanilla, gently folding through.
5. Spoon small pavlova nests onto the lined tray (or pipe for a neater finish).
6. Bake for 1 hour, then turn the oven off and leave meringues inside to cool completely.
7. Mix yogurt with vanilla.
8. Add yogurt to each pavlova nest.
9. Top with fresh berries and a sprinkle of toasted coconut or nuts.
