The restaurant is enjoying community support after it was able to offer table service to customers on Thursday.
Mr Sukhchain said it was nice to see more activity in the restaurant and to welcome people from outside Seymour.
“We had 10 people sitting inside on Thursday and a few more outside. We’re feeling very positive at the moment,” he said.
“Throughout the lockdown we’ve enjoyed fantastic support from the community, and it was nice to see some people from Avenel and Nagambie visiting as well.
“We expect to be busier as more people start to come out, so we’ve been hiring more staff in preparation.”
Mr Sukhchain urged people to continue following the rules to avoid having to take another step back.
“Everyone has been following the rules in the first few days of the eased restrictions and I’m hoping that continues,” he said.
“We’ve been here before and had to go back into restrictions — and we don’t want to see that happen again.
“If we all work to keep one another safe, we will continue to enjoy this freedom and can look ahead to restrictions easing further.”
