The man, originally from NSW, was involved in the collision at the intersection of Euroa-Shepparton Rd and Karramomus Rd about 11 am.
Shepparton Police Highway Patrol Acting Sergeant Michael Jarrett said the man's Mazda sedan collided with a garbage collection truck.
“For whatever reason the vehicles collided head on, however we are not able to determine why as of yet,” he said.
The driver of the truck, a 46-year-old man, was taken by ambulance to Goulburn Valley Health following the collision.
He suffered lower body injuries and is expected to be discharged from hospital today.
Police and Shepparton Search and Rescue remained at the scene until 6 pm on Monday, with Shepparton-Euroa Rd closed in both directions while the area was cleared.
Act Sgt Jarrett confirmed the circumstances around the collision were still under investigation.
The death is the first on Greater Shepparton roads this year, bringing the state total for 2020 to 15 so far.
